Busy 2015 Race Schedule

2015 is going to be a busy race year.  I am planning on doing the Conquer the Gauntlet, Diva Dash, Mustache Dash & I am on a Relay Team for The Route 66 Marathon.  I have all these races before expect Conquer the Gauntlet.  That is the one I am most worried & excited about. I am also thinking about throwing in a virtual race.  Has anyone done one of these??  Did you like it??

Until next time!!

Let's Talk Smoothies

Today I thought I would share a couple easy smoothie recipes.  I am absolutely in love with my Ninja Bullet.  I love that I can make so many different smoothies.  I am not really into the protein powers.  They can get a little pricey.  So instead I use Instant Breakfast & I think it works pretty good.  I usually get the variety box. I come with Strawberry, Vanilla, Milk Chocolate, Dark Chocolate & Chocolate Malt pouches. I thought I would share a couple recipes that can be altered to fit any taste.

The 1st one I am going to share is Chocolate & Peanut Butter Smoothie. I just use the amount of milk that the Instant Breakfast says to. Which is 1 cup with either Milk Chocolate or Dark Chocolate Instant Breakfast Pouch.  I use the Milk Chocolate because I am just not a big fan of Dark Chocolate. Put that in the bullet cup thing.  Next add about 2 tablespoons of Peanut Butter.  I normally get the Jif to go.  It has the perfect amount of peanut butter for the smoothie.  Then add ½ cup of regular yogurt.  Blend all that together.  Taste it to see if you want it sweeter.  I normally add a little honey.

The 2nd one is Strawberry.  It is basically the same recipe as the Chocolate & Peanut Butter Smoothie.  You just use Strawberry Instant Breakfast pouch instead of Chocolate. I also add frozen strawberries to get more strawberry flavor and because I love strawberries.  I have also added Blueberries.  I did try raspberries before it was good I just didn’t like that seeds did get blended up very well.

I just think that the Instant Breakfast works just as well as the protein powers & it costs less!!

 Until next time,

Spaghetti Sauce

Every week I make a batch of homemade Spaghetti Sauce so I thought I would share the recipe I have post this recipe before but I thought I would just repost it.  It is super yummy, super easy & good for you!

1 – Large White Onion, diced

2 – Zucchini, diced (Or you could use any veggie you like.  I have used Carrots before.)

10 – Mushrooms (I used just regular button mushrooms but you could use any kind you would like)

3 – Cloves of Garlic

About a table spoon of Olive Oil with about 1 teaspoon dried oregano & dried basil

¼ Cup Red Wine Vinegar

¾ Cup of Red Wine (I used Cabernet Sauvignon)

2 – 15 oz. Cans Tomato Sauce (I just use the store brand)

1 – 15 oz. Can Petite Diced Tomatoes

1 – 15 oz. Can Crushed tomatoes

2 Tablespoons Dried Oregano

2 Tablespoons Dried Basil

1 Tablespoon Dried Parsley

Salt & Pepper to taste

1.    Chop your onion, zucchini & mushrooms.  Heat your oil on a medium heat in a fairly big stock pot.  Drop you onion, zucchini & mushrooms with a pinch of salt in the oil let it soften (about 5 to 10 minutes).  Add your garlic.

2.    When you can smell your garlic add in red wine vinegar & wine.  Let that simmer until it starts to thicken a little.

3.    Next, add all your canned tomatoes.  Then, add all you seasonings.  Add the salt & pepper at the very end so you taste it to see how much is needed.  Let everything simmer for about 15 to 20 minutes.  Then turn off the heat & let it cool.  Or you can use it right then.  I make it on Sunday & week use it during the week sometime.

We like using Rigatoni Pasta with this spaghetti sauce.  We normally go with Chicken in it or nothing at all!!  The Red Wine Vinegar & wine gives the sauce a great flavor!!

Until next time,

Mini Pizza

I made the most delicious mini pizzas this weekend.  I found the recipe on Pintrest but added stuff to it to make it my own.  So I thought I would share the recipe.

1 – 8 count package of burrito tortillas (You don’t have to use the whole package but I did because they were so yummy)

1 jar – Store bought Pizza Sauce

2 8oz bags of Pre-Shredded Italian 5 Cheese blend (Yes you will use both bags if you use all 8 tortillas)

1 bag of mini pepperoni

Steams from 1 package of mushrooms (diced)

Parmesan Cheese to sprinkle on top of pizzas

1 teaspoon of each dried basil, oregano & parsley

First, preheat your oven to 425 degrees.  The take a 1” round cookie cutter & cut rounds out of your tortillas.  You should get about 6 out of each tortilla.  Then get out your muffin tin & spray the bottom of it with cooking spray.  Place you cut out tortillas in the bottom for each muffin cup.  Then spoon a teaspoon of sauce on each tortilla & spread the sauce on the tortilla.  Then sprinkle some basil & oregano on the sauce.  Not too much just a little.  The top the mini pizzas with probably about a table spoon of the shredded cheese.  The put 4 mini pepperoni on each mini pizza.  Next put a few diced up mushrooms on each mini pizza, then sprinkle with parmesan cheese & parsley.  Bake for 10 minutes at 425 degrees.

When these are done it’s like a thin crust pizza & they are delicious.  You can really put any topping on them you want they just need to be small & not the heavy!!

Until next time!!
