Happy Monday

This weekend I made some very healthy & good recipes.  I starting over today with healthy eating & working out. 
The 1st recipe I am going to share is:



Corn & Black Bean Salad
Corn & Black Bean Salad

2 Cans of Golden Corn, drained
2 Cans of Black Beans, drained & rinsed
1 Can Diced Tomatoes, drained
½ Red Onion, Diced
2 Jalapenos, Diced
1 Bunch of Cilantro, chopped
1 tsp Garlic Powder
Salt & Pepper to taste
Juice of 1 lime

Just combine all ingredients in a big bowl & put in refrigerator for at least an hour.

Baked Chicken Nuggets

2 Packages of Chicken Tenders, cut into bit size pieces
¼ Cup Panko Bread Crumbs
¼ Cup Ground Pretzels
1 tsp garlic powder
1 tsp Chili powder
Chicken Nuggets
1 tbsp. Parmesan Cheese
Salt & Pepper to taste
Chicken Marinade
1 ½ Cup Milk
¼ Cup Plain Yogurt
Salt & Pepper (about a tsp of each)
    
             Put cut up chicken I a bowl w/ mile mixture. Marinate chicken for 30 minutes to 1 hour.

Mix the bread crumbs, pretzels & spices in a bowl or re-sealable bag.

Once chicken has be marinating for 30 minutes to 1 hour drain chicken in a colander.  

Then place chicken in bread crumb mixture and coat well.  Place coated chicken on backing sheet.

Back at 400° for 10 minutes.

Ice Cream
Banana, Peanut Butter & Chocolate Ice Cream

3 Bananas, cut into 1 inch pieces & frozen
¼ Cup Plain Yogurt
2 heaping tbsps. of Creamy Peanut Butter
3 tbsps. Chocolate Syrup
1 tsp Vanilla

Place frozen bananas in food processor with the yogurt and blend until smooth.

Add the rest of the ingredients and blend until smooth.

Place mixture in Freezer proof container & put in freezer.

Workout Success & Healthy Eating


I have been working out with my new workouts for 2 days & been trying to eat healthy.  I have been drinking smoothies every morning for the last 3 days!! I have also been trying to eat healthy. 

My new workouts have been really good.  I have done Cardio & Lower Body workouts.  The Cardio Workout I did on Monday was hard but I felt amazing after I did it.  Tonight I am going to do another Cardio workout. 

Monday I made Orzo Pasta and it was really good so I thought I would share the recipe.

1 Cup Orzo Pasta

1 Tablespoon Olive Oil

1 Tablespoon Butter

Parmesan Cheese

Cheddar Cheese

Salt & Pepper

All you do is cook the pasta.  Drain the pasta.  Add the Olive Oil & Butter let the butter melt.  Once the butter is melted add the parmesan cheese.  Then add the salt & pepper to taste.  Then serve & top with cheddar cheese.

This recipe is very simple & it is very good!

At Home Workouts

The last time I went to the gym I noticed how crowded it was.  All the weight machines were always taken.  And I just wanted to get into a routine on the machines but I couldn’t.  I like to work out in the evenings because I am not a morning person!! I am thinking about changing up my workout schedule & going to the gym once or twice a week & working out at home the other days.  I have come up with some good workouts I can do at home.  I have 2 cardio workouts, a Home Bootcamp Workout & my upper & lower body workouts that I have share in previous post.  I wanted to share the 2 cardio & the Home Bootcamp workouts today.

Busy 2015 Race Schedule


2015 is going to be a busy race year.  I am planning on doing the Conquer the Gauntlet, Diva Dash, Mustache Dash & I am on a Relay Team for The Route 66 Marathon.  I have all these races before expect Conquer the Gauntlet.  That is the one I am most worried & excited about. I am also thinking about throwing in a virtual race.  Has anyone done one of these??  Did you like it??

Training Schedule


I have made the decision not to do the 10k in April & focus all my training on Conquer the Gauntlet.  I have come up with the following training schedule.  I really hope this works because I don’t what else to do.  This will be my 1st Obstacle Course Race & I am really looking forward to doing it.   

Monday – Rest

Tuesday – Cardio (Running or Biking)

Wednesday – Weights (Upper & Lower Body)

Thursday – Bootcamp or more weights

Friday – Rest

Saturday – Cardio and/or weights (Upper & Lower Body) and/or Playground training (weather permitting)

Sunday – Weights (Upper & Lower Body)

 

Lower body workout with hand weights (I do this at home)

I do 12 reps of each of these exercises, 3 sets

·         Squats

·         Lunges (12 on each leg)

·         Deadlifts

·         Donkey Kicks

·         20 Crunches

I do 12 reps of each of these exercises, 3 sets

·         Overhead Press

·         Upright Row

·         Tricep Extension

·         Bicep Curls

·         Dumbbell Swing (each hand 12 reps)

·         Tricep Kickbacks

·         Flat Chest Press

·         Flies

I Have posted these before but I thought it would be a good idea to post them again just for a refresher.  My original were on 10/20 & 10/21 of last year both posts including pictures.

I use 10 to 12 pound weight for each of the workouts.  Between each sets I rest for about a minute.

Let's Talk Smoothies


Today I thought I would share a couple easy smoothie recipes.  I am absolutely in love with my Ninja Bullet.  I love that I can make so many different smoothies.  I am not really into the protein powers.  They can get a little pricey.  So instead I use Instant Breakfast & I think it works pretty good.  I usually get the variety box. I come with Strawberry, Vanilla, Milk Chocolate, Dark Chocolate & Chocolate Malt pouches. I thought I would share a couple recipes that can be altered to fit any taste.

The 1st one I am going to share is Chocolate & Peanut Butter Smoothie. I just use the amount of milk that the Instant Breakfast says to. Which is 1 cup with either Milk Chocolate or Dark Chocolate Instant Breakfast Pouch.  I use the Milk Chocolate because I am just not a big fan of Dark Chocolate. Put that in the bullet cup thing.  Next add about 2 tablespoons of Peanut Butter.  I normally get the Jif to go.  It has the perfect amount of peanut butter for the smoothie.  Then add ½ cup of regular yogurt.  Blend all that together.  Taste it to see if you want it sweeter.  I normally add a little honey.

The 2nd one is Strawberry.  It is basically the same recipe as the Chocolate & Peanut Butter Smoothie.  You just use Strawberry Instant Breakfast pouch instead of Chocolate. I also add frozen strawberries to get more strawberry flavor and because I love strawberries.  I have also added Blueberries.  I did try raspberries before it was good I just didn’t like that seeds did get blended up very well.

I just think that the Instant Breakfast works just as well as the protein powers & it costs less!!
