I made the most
delicious mini pizzas this weekend. I
found the recipe on Pintrest but added stuff to it to make it my own. So I thought I would share the recipe.
1 – 8 count
package of burrito tortillas (You don’t have to use the whole package but I did
because they were so yummy)
1 jar – Store bought
Pizza Sauce
2 8oz bags of
Pre-Shredded Italian 5 Cheese blend (Yes you will use both bags if you use all
8 tortillas)

1 bag of mini
pepperoni
Steams from 1
package of mushrooms (diced)
Parmesan Cheese
to sprinkle on top of pizzas
1 teaspoon of
each dried basil, oregano & parsley
First, preheat
your oven to 425 degrees. The take a 1” round
cookie cutter & cut rounds out of your tortillas. You should get about 6 out of each
tortilla. Then get out your muffin tin
& spray the bottom of it with cooking spray. Place you cut out tortillas in the bottom for
each muffin cup. Then spoon a teaspoon
of sauce on each tortilla & spread the sauce on the tortilla. Then sprinkle some basil & oregano on the
sauce. Not too much just a little. The top the mini pizzas with probably about a
table spoon of the shredded cheese. The put
4 mini pepperoni on each mini pizza.
Next put a few diced up mushrooms on each mini pizza, then sprinkle with
parmesan cheese & parsley. Bake for
10 minutes at 425 degrees.
When these are
done it’s like a thin crust pizza & they are delicious. You can really put any topping on them you
want they just need to be small & not the heavy!!
