Weekly Update


It has been crazy lately but I did manage to get in the gym 3 times last week!!  Tuesday was step class.  All I can say was I didn’t die!!!  I really like step class but when you don’t go for a while it is rough to get back!!  But I did it!!!  Wednesday I ran 1 ½ miles and it felt so good to run!!!  Running is a passion!!  I want to work up to a Half Marathon & maybe even a whole Marathon!!  Thursday was my favorite class Bootcamp!!  I don’t know why I like it so much.  Maybe it’s the weights we do!! Last Monday was the Boston Marathon & we were supposed to wear running shrits but I decided to wear my Tulsa 5k braclet instead.
As you know I am a "I'm Fit Possible" Ambassador & the founder sent us a gift!!  I love what she sent!!!  Now everyone will know how passionate I am about fitness & well being!!! 

Now that my Hawaii trip is only about 30 days away I need to get my but into gear!!  I want to wear a bikini & right now that just is not happening!!  But it will!!  I am super excited to go on this trip!!  I get to spend some time with my cousin Erin!!  I don’t get to see her very often so this will be so much fun!!  We are planning on doing Yoga on the Beach & go parasailing!!! Which neither one of us has ever done!!  I can’t wait!!!!

Last Week's Update


It was a crazy week last week!!  I didn’t get into the gym at all!! L But last Tuesday was Cole’s birthday!!  He turned 16!!  I can’t believe it!!  So last Saturday I got my hair done, which was much needed!!  Cole & I went to see Captain American, which was awesome!!  Then we went to dinner with my parents & then had cake at there house!!  On Tuesday I made Cole a special dinner!!  Which I will share on Tasty Tuesday!!  Last week at work was just crazy!!  I just didn’t feel up to going to the gym after work!!!  This weekend was kinda crazy to!!  I had Friday off so I went & had Breakfast all by myself!!  Then went to lunch with my daddy & my niece Ella!!  Todd took Friday afternoon off so we spent the afternoon together!  Saturday Todd & I worked in the yard so I kinda got a workout!!  Then Saturday afternoon we went to Ella’s 2nd birthday party!!  Easter Sunday was just a relax day!!!!

I hope got get in the gym every day this week!!  I only have 39 days until I go on vacation & I want to look my best!!
Today I want to do just a short run!  Tomorrow I might go to step class, Wednesday run & bike & then on Thursday I will do bootcamp!!!

Tasty Thursday


It has been a crazy & rough week so I missed Tasty Tuesday!  But have no fear I give you Tasty Thursday, it doesn’t sound as good though!!

Pulled Pork Smoked Stuffed Mushrooms

16 Button Mushrooms
So good!

About a cup Pulled Pork without BBQ Sauce (chopped up)

The steams from the mushrooms (chopped)

2 – 8 oz. Packages of cream cheese

2 – Jalapenos Sliced

1.    De-steam the mushrooms & wipe off the mushrooms

2.    Chop up the steams & pork.  Mix with softened cream cheese.

3.    Spoon a good amount of the cream cheese mixture into each mushroom. I would say about a tablespoon.

4.    Top each mushroom with a jalapeno slice.

5.    Put on smoker for about 45 minutes.  You could also bake these I think.

Weekend Update


This past Saturday I got to witness the cutest thing I think I have ever seen.  My nephew, who is 6, competed in a mini Triathlon.  This consisted of a 50 yard swim, ½ mile bike ride & a ¼ mile run.  It all took place inside.  I wish my son had done this sort of thing when he was younger.  I took a few pictures, so enjoy!!!

Tasty Tuesday


I think I will do a Tasty Tuesday Post every week!  So here is the 1st Tasty Tuesday!!!

Every week I make a batch of homemade Spaghetti Sauce so I thought I would share the recipe.  It is super yummy, super easy & good for you!

1 – Large White Onion, diced

2 – Zucchini, diced (Or you could use any veggie you like.  I have used Carrots before.)

3 – Cloves of Garlic

About a table spoon of Olive Oil

¼ Cup Balsamic Vinegar 

2 – 15 oz. Cans Tomato Sauce (I just use the store brand)

1 – 15 oz. Can Petite Diced Tomatoes

1 – 15 oz. Can Crushed tomatoes

2 Tablespoons Dried Oregano

2 Tablespoons Dried Basil

A pinch of Crushed Red Pepper Flakes

Salt & Pepper to taste

1.    Chopped your onion, zucchini & garlic.  Heat your oil on a medium heat in a fairly big stock pot.  Drop you onion & zucchini in the oil let it soften (about 5 to 10 minutes).  Add your garlic.

2.    When you can smell your garlic add in balsamic vinegar.  Let that simmer until the vinegar starts to thicken a little.

3.    Next, add all your canned tomatoes.  Then, add all you seasonings.  Add the salt & pepper at the very end so you taste it to see how much is needed.  Let everything simmer for about 15 to 20 minutes.  Then turn off the heat & let it cool.  Or you can use it right then.  I make it on Sunday & week use it during the week sometime.

Finshed Product!
We like using Rigatoni Pasta with this spaghetti sauce.  We normally go with Chicken in it or nothing at all!!  The Balsamic Vinegar gives the sauce a great flavor!!  I am posting a picture of the finished product.  This was made with no zucchini (I forgot to buy it) & Chicken!!!
